There&#8217;s just no in between and this is probably because Sushi is made from raw fish and other ingredients that evoke strong reactions of love and hate.</strong></p>
<p>Those who love their Sushi agree that there are certain tips that will help those starting out to have the best possible experience as they try a new food. Follow these guidelines, and it&#8217;s possible you may end up in the Sushi-lovers camp.</p>
<p>Start by checking out any Sushi restaurants in your city. All quality sushi establishments have a bar where the fish is displayed. Don&#8217;t be reluctant to take a look, that&#8217;s what the bar is there for. Take a good look at the fish. It should look juicy, not dry, and it should be what the chef is using to prepare sushi dishes. If he isn&#8217;t using the display fish, ask why not. Truly reputable sushi restaurants take great pride in showing off the quality and freshness of their fish, which is what this culinary specialty is all about. If the restaurant doesn&#8217;t have a fish display, don&#8217;t even think of eating sushi there.</p>
<p>Next, avoid any &#8220;all you can eat&#8221; sushi restaurant. Once again, the issue is quality, and places that advertise &#8220;all you can eat&#8221; typically prepare large amounts of fish in advance. The freshness diminishes the longer the food is held. Granted, top quality seafood is expensive, but when it comes to sushi, diners really do get what they pay for. Those who remain unconvinced ought to try their own taste test. Eat once in an &#8220;all you can eat&#8221; sushi restaurant, and then go to a traditional establishment where diners pay by the piece. The flavor of premium quality sushi should be all the evidence needed to prefer the traditional restaurant.</p>
<p><strong>Another thing to note is whether diners are forced to order everything all at once, or whether they can order a few pieces of sushi at a time.</strong> A quality restaurant will place as much emphasis on the dining experience as on the food, allowing its customers to savor each piece of sushi individually. After all, it&#8217;s not Japanese fast food, but a gourmet delicacy in its own right. If the server in a sushi restaurant insists the diners order all at once, that could be a sign that the fish isn&#8217;t fresh, or that large amounts have been prepared in advance. Take note, and try another establishment.</p>
<p><em>Also note the flavor of the rice used in sushi dishes. Sushi rice is short-grained rice combined with sugar, rice vinegar, salt and water. This imparts a delicate flavor to the rice accompanying the fish. If the rice has no flavor, try another restaurant.</em></p>
<p>Check the menu for a combination of traditional sushi and sashimi dishes and more modern versions such as California Rolls. A lack of traditional dishes on the menu could mean that the sushi chef has not received proper training, and the sushi served there could be less than authentic.</p>
<p>Finally, treat yourself to the &#8220;chef&#8217;s special. Just as the sushi chef to prepare what he thinks best with the available fish. <strong>It&#8217;s a risk, true, but it could also lead to a tasty experience &#8211; to say nothing of creating a good relationship with the chef!</strong></p>

<p><strong>What Are Avocados?</strong></p>
<p>Avocados are also known as alligator pears due to the rugged outer shell, and the fact that they are shaped like a pear. The shell is green when the fruit is still unripe, but then turns a dark color as it ripens, and the inside flesh that surrounds the pit remains a soft green color.</p>
<p>Avocados are famous for making guacamole. However, they are a versatile fruit, that can be used as a spread for sandwiches and wraps, or added into leafy green salads; either as a topping or as a dressing along with olive oil, lemon juice and sea salt. They are also great for making smoothies, raw puddings and pies and many other delicious desserts.</p>
<p><strong>How to Prevent Browning</strong></p>
<p>The browning of the cut avocados occurs when the flesh comes in contact with air. This is called oxidation, and the only way to prevent it, is to keep the avocado flesh away from air. Therefore any method that keeps the air away from the avocado flesh will work to prevent browning.</p>
<p><strong>Lemon/Lime Juice. Lemons and limes are high in ascorbic acid, which helps to prevent the oxidation process</strong>. Thus the juices are very effective when rubbed on the surface of the avocado before storing in the fridge. A good practice is to coat the avocado, and then store in an airtight container or a bag for extra protection.</p>
<p>Olive Oil. Olive oil works in a similar way as citrus juice when rubbed onto the surface and then stored in an air-tight container in the fridge.</p>
<p>Plastic Wrap. Plastic wrap that does not allow any air to get through, works well when wrapped around tight so that there is no air surrounding the avocado. It works well when storing leftover guacamole in a container. Simply pat the guacamole down with a spoon, and then place a sheet of plastic wrap directly onto the guacamole. Close the container with a lid and store in the fridge for up to 24 hours.</p>
<p><strong>Vacuum Bags. Vacuum bags or regular Ziploc bags work just as well, as long as there is no air that can come in contact with the flesh.</strong></p>
<p>Leave the Pit in. Many people swear the pit also helps to prevent browning, but others say it is a myth, and that the pit will only protect the flesh that is directly underneath it.</p>

			<content:encoded><![CDATA[<p><strong>Too many of us live life in the fast lane. We want things fast, and sometimes we give up the frills and fancies in our day to day life just to get things quickly.</strong></p>
<p>Picnics by nature, embrace the slowness of the day. Spring afternoons with the biggest worry being a Frisbee is the order of the day in Picnic Land!</p>
<p>So when you ponder a picnic, of course you ponder food. The 18 hour-a-day you says run through McDonalds and grab &#8220;to go&#8221; food and rush to go relax. In the simple nature of the day, I would be remiss to say I did not at least once do exactly that, but remembering all the same that a picnic brings a little bit of &#8220;lazy luxury&#8221; to the day. Your picnic food should do the same.</p>
<p><strong>&#8220;Lazy Luxury&#8221; with picnic baskets is all about attitude.</strong> Think ole George W is too good to eat a McDonald&#8217;s hamburger? Hell no&#8211;but I&#8217;m sure it&#8217;s served on very cultured china plates! Don&#8217;t make your picnic harder when it comes to picnic foods, just make it a bit more luxurious. Try combining a hamburger with a great bottle of wine or fried chicken with what looks like a high end veggie tray. Embrace the unusual, but don&#8217;t kill yourself preparing picnic foods for it!</p>
<p>Here&#8217;s what I mean, try these picnic foods:</p>
<p>McDonald&#8217;s quarter-pounder with cheese plus a great bottle of your favorite Merlot and a scrumptious tray of cheese and crackers.</p>
<p>Note: don&#8217;t freak out over the cheese and crackers&#8211;cheese cubes come pre-cut at your local grocery and have you looked at the wide cracker assortment lately?</p>
<p><strong>Taco Bell Quesadillas, chilled margaritas, and fresh salsa assortments</strong></p>
<p>&#8220;Fresh salsa&#8221; scare you? It&#8217;s easy! For this picnic food, dice up 3 tomatoes, grab a can of green chilies, throw in some fresh parsley, a small diced onion (red onions are my favorite!), and a package of taco seasoning. Great stuff. Don&#8217;t forget a staple picnic food&#8211;chips!</p>
<p>Chilled margaritas&#8211;did you know they come pre-mixed? They are often in six packs. Backpack Coolers are ideal to keep those beverages just the right temperature for your afternoon relaxation.</p>
<p>Chili&#8217;s Lettuce Wraps and mixed nuts (White Wine for this one!). Low carb lifestyle? No problem&#8211;lots of restaurants have low carb choices, and this one is one of my favorites. There is a bit of meat, some veggies, all grilled just a little, and I wrap them in lettuce.</p>
<p>Chili&#8217;s gives you the ingredients, you build them&#8211;how fun! Throw in some mixed nuts and you have a perfect Atkins compliant meal!<br />
<strong>A bucket of the colonel&#8217;s chicken with a lovely veggie tray</strong></p>
<p>Here&#8217;s where you do what one of my college roommates was great at&#8211;you get take out food, take it out of the &#8220;take out&#8221; container, and put it on your china or picnic ware! Grab that pre-fab veggie tray from the produce section of the market, display it right, and it looks like you spent hours!</p>
<p>So to summarize, what is my advice about picnic foods? Eat what you like, but do it in style, make it memorable, go high-end with the presentation (a gourmet picnic backpack helps!), but not necessarily with the food. Eating picnic foods is not about how much you spend, but how much you enjoy the experience. Make it an event. With a picnic food, go to the end of the daring scale, combine the unexpected! <strong>Pair a $100 bottle of wine with a $3 hamburger! Your special someone for that intimate picnic (or guests) will rave about it for years!</strong></p>

<p>&#8220;This is not hot, it&#8217;s medium at best.&#8221;</p>
<p><strong>How many times have you heard someone say that? The truth is that people have different tolerances and judgments about the heat of their food as much as one person liking one dish and another hating it.</strong> It&#8217;s all about individual taste, and tolerance.</p>
<p>Capsaicin, an irritant, is an active component found in chili peppers. It was first extracted in 1816 by Christian Bucholz and then later refined through the years including a pure crystalline form in 1876 by John Thresh who gave it today&#8217;s spelling &#8220;capsaicin&#8221; as we know it. In 1961 two Japanese chemists, S. Kosuge and Y. Inagaki, isolated similar substances from the chili peppers and called them capsaicinoids.</p>
<p><strong>In capsaicinoids, there are two main compounds: capsaicin and dihydrocapsaicin.</strong></p>
<p>To understand the heat level involved in these two compounds, we must first understand the Scoville Heat Scale. The scale for measuring the heat of food was created by Wilber Scoville in 1912 while employed at Parke-Davis pharmaceutical company to measure &#8220;hotness&#8221; of various chili peppers.</p>
<p><em>In Scoville&#8217;s method, an extract of the capsaicin oil from an exact measured amount of dried pepper is joined with incremental amounts of sugar-water until the &#8220;heat&#8221; is no longer detectable by a team of up to five tasters.</em> The amount of sugar-water added to the extract until the heat is diluted becomes the measure on the Scoville scale. The weak spot of this test is that it is dependent on the personal taste and tolerances of the testers, who were only allowed to test one sample per session. How would you like that job? As unscientific as this seems, in 1922, Scoville won the Ebert prize from the American Pharmaceutical Association for the best report of original investigation of a medicinal substance.</p>
<p>Starting at zero on the Scoville heat scale is the bell pepper with virtually no heat, followed by the Poblano pepper at 500-2500, Jalapeno pepper at 2500-8000, Cayenne at between 30,000-50,000, and all the way up to Naga Jolokia pepper rated at 855,000-1,075,000. The variance in the numbers for each pepper can be influenced by numerous factors such as seed lineage, the soil they are grown in, and the climate. Of the two main compounds mentioned earlier: capsaicin is between 15 million and 16 million, and dihydrocapsaicin is a cool 16 million.</p>
<p><strong>So why is it that we have different perceptions of the sense of heat?</strong></p>
<p>Sensory receptors in the body vary for different reasons. The chemosensory system, which transmits the signals, can be influenced by factors such as: smoker/non-smokers, colds or allergies, age, head injuries, dry mouth, medications, and history or familiarity of eating hot or spicy foods. When you are born you are fortunate to have 10,000 taste buds&#8230; but you are eating baby food. Between the ages of 40-50, the number of receptors on your taste buds start to dim and decrease.</p>
<p><strong>But taste buds are not the main player here&#8230; it is another chemosensory mechanism that involves thousands of nerve endings on the moist surfaces in your mouth, and throat.</strong> These nerve endings sort out the temperature between the sensation of ice cream and the fiery taste of chili peppers.</p>
<p>In families where hot or spicy food is a mainstay, you will often see a high tolerance to high heat where others would scream at the intensity.
